If you live in Europe or North America, you probably know this spice under the name cinnamon. But that's not right. It's a pretty common mistake because cassia has been sold under the name cinnamon since the begining of time. You can even find it under these different names. There's a good chance that you never seen it before. And that's because you don't find it easily in the supermarkets or in grocery stores. Most of the cinnamon that you're gonna find in your supermarket is gonna be cassia. Latin America actually is the biggest consumer of cinnamon. Mexico loves it so much that it's importing half of the world's production. Scientific name of Ceylon Cinnamon is Cinnamon Zeylanicum.

But where does cinnamon come from? Well, Sri Lanka is the king of Cinnamon. It's in this unique terroir that cinnamon trees were originally cultivated. If cinnamon is usually more expensive, it's because of the long complex harvesting and drying process.

The first thing we do is, harvest three year old cinnamon trees. And then the young shoots every year after that. The bark is then scraped rubbed vigorously which loosens it. It's then peeled away with a special knife. The cinnamon will be layered one on top of the other on a fine metal rod to form a very long stick. And the last step is to let it dry and curl in the open air. As mentioned before, it's a long and complex process to produce cinnamon. There are even different qualities of cinnamon sticks. If you see a zero grade it comes from the thickest part of the base. This flavour is gonna be sweet and woody. And higher the root is in the tree, the thinner becomes. The finest bark gives five zeros Grade (00000). And those young roots have the most indelicate and sweetest flavour. Like a neurochemical.

Ceylon cinnamon is considered real cinnamon. Ceylon cinnamon is known as a powerful antioxident. It contains an oxygen radical absorbance capacity rating of 6500 per teaspoon. Pomegranate and blueberry absorb below 6000.

Above mentioned rating simply measures the ability to disarm free radicals. Cinnamon can help balance blood sugar. Regulate metabolism. Lower bad cholesterol and even supply arthritis relief. Ceylon cinnamon has more theraputic value than others. You can use cinnamon to flavour smoothies sprinkle on oatmeal and mix them into sweet potatoes.

Reason why you don't want to use cassia is because cassia contains something called coumarin. and high doses of coumarin can be known to cause liver damage. Ceylon Cinnamon has ultra low coumarin levels. It does not damage your liver like Cassia. Cassia is fine in small doses. But if you're gonna be taking it kind of theraputically you're gonna want to try to find Ceylon cinnamon. Now that you know what kind of cinnamon to buy. And actually we just described that there is only one type of cinnamon and that's Ceylon Cinnamon. Cassia is something else which actually is not cinnamon.
